Day 2: More HG Adaptations

Yesterday, I said that I wanted to make a healthier version of Schwan’s Apple-Cinnamon French Toast Sticks…and I did! I adapted HG’s Canolli-Stuffed French Toast Nuggets, subbing applesauce for the ricotta cheese and chocolate chips. It turned out GREAT! Vanessa loved them and it helped me get rid of a few hot dog buns since hubby way overbought for the cookout we had last weekend. The only thing I’d probably change is to mix some cinnamon in with the applesauce. I mixed it in with the egg substitute and it was good, but the filling could’ve been more cinnamony.

Apple-Cinnamon French Toast Nuggets
Cal 180, Fat 5.4g, Cholesterol 0.6mg, Sodium 355mg, Carb 25g (3.5g Fiber, 8.6g Sugar), Protein 9.6g Approx Cost per Serving: $1.00
2 hot dog buns (preferably whole-grain)
1 single-serving cup (or 1/2 cup) natural applesauce
1/4 cup egg substitute
1/2 tsp cinnamon (divided in half)
1 tsp Raven’s Nest Mulling Spices (optional)
1/8 tsp vanilla extract
1 Tbsp margarine or buttery spread

Melt margarine in skillet. Mix 1/4 tsp of the cinnamon and mulling spices and vanilla with egg substitute. Mix the remaining cinnamon into applesauce and spoon into buns. Cut stuffed buns into quarters and dip in egg mixture. Cook in skillet until golden brown on all sides.

For lunch, we had Dogs in a Blanket that I had made and frozen last week. Super-easy to make and very kid-friendly. Just spread some Laughing Cow Light Swiss Cheese on a crescent roll triangle, put in half a hot dog, roll up and bake in a 350 degre oven for about 12-15 min. Yummy! For dinner, Vanessa wanted tempura shrimp, so I obliged. Since she’s so skinny, I don’t do a ton of lo-cal, lo-fat dishes for her if I can help it. It’s really sucks sometimes trying to lose weight with skinny people in the house who need to gain. Makes meals that much more challenging. For myself, I had a cheeseburger made with Amy’s BBQ veggie burger, American cheese (the full-fat kind because that’s all we had…boo!), lettuce and ketchup between two 100-calorie sandwich rounds. Good stuff.
