Haven't posted in a couple of days (doing taxes sucks :P) but I've still been rolling right along with this healthy eating lifestyle.
Breakfasts have been varied and fun. Yogurt with honey a couple of days, an egg mug with string cheese, roasted tomatoes, avocado, and spinach yesterday, a bowl of kashi cereal and a banana today. Lunches have been courtesy of EarthFare...hot bar Tuesday, chicken salad and spinach sandwich (made with the FREE ingredients I got there), and the $5 deal today which consists of a slice of Mediterranean pizza, a cup of fruit and a cup of soup (I mad mine Carrot Ginger for something new). Mmm...so good and so good for me!
Tuesday and Wednesday dinners were Vanessa's favorite: soup and grilled cheese. I mixed things up a bit on Wednesday by making cheese quesadillas with some high fiber, low carb tortillas I found. Tuesdays's grilled cheese was also a bit out of the ordinary since I used the 100-calorie sandwich rounds. She didn't seem to mind the healthy switch because she proclaimed them both very yummy. The soup, however, was canned Campbell's Disney Princess Chicken Noodle on Tues and Healthy Selections Tomato Basil on Wednesday. Not the healthiest options, but not the worst either. Yesterday's dinner I really took a chance and made cheeseburgers with Amy's BBQ Veggie Burgers. I wasn't sure how Vanessa would like those compared to ground beef, but she ate hers right up and said it was very yummy. Yay! Now if I can just get her convinced to like the local (Cruze Farms) non-homogenized whole milk I bought. I've been sneaking it into her cereal without complaint, but when I gave it to her straight, she said it was "yucky". I think she's just not used to the thickness since I have been buying Smart Balance Fat-Free milk for awhile.
This afternoon I get to hit the farmer's market for the first time this year. Yay! I'm so jazzed up for some farm fresh fruits and veggies. And I have all weekend to experiment. I bought a can of tahini in hopes of getting some eggplant and making some baba ganoush. Mmm....
