Cooking Class!

This is going to be a quick post before we head to bed. I promise I'll get back to posting recipes and HG recipe makeovers soon. Life is just soo busy sometimes!

But I have to post my Proud Mommy moment. I've been trying to get Vanessa into some sort of after-school activity ever since hubby got stationed at Fort Campbell. When he was living here, he took her to gymnastics classes once a week, but they start at 4:00 and I don't get off work until 4:30, so that was a no-go. I tried to get her into a Saturday class, but they were all full. She was uninterested in dance, soccer or karate...so I pretty much gave up until I realized that she loves to cook...why not send her to cooking classes? Well, easier said than done because the one and only kids cooking school in town closed up a couple of years ago. But I just happened upon a Facebook post by our local EarthFare advertising kids cooking classes that were starting this evening. Woo hoo! So now, every other Wednesday, we're heading to EarthFare to let her help cook up some tasty and healthy treats.

Tonight she was the only kid in the class (there were two classes, the earlier one had two kids in it, but the later one was just her), so she essentially got private cooking lessons. And for only $15 (with at least 50% going to charity)...how awesome is that? They made Tuscan white bean dip, a balsamic vinegar marinade, and homemade butter. Yum yum! Next class is going to be turkey meatball soup and "something sweet" as yet undecided. She loved every minute of it and can't wait to go back. The teacher said she was a natural at it and she was really surprised how much she knew (what all the utensils, tools, etc were; safety, etc). She even commented on how she carefully sprinkled the herbs into what she was making rather than just dumping them in like most kids do. Maybe I'll have her make dinner every night! Haha! 

Shown is our post-class dinner: the bean dip she made, with olive oil & sea salt flatbread crackers, and sliced tomatoes. For dessert was some (free!) blueberries and we shared a double chocolate blackberry scone. Mmm mmm!
